Chunky Chicken Soup

  • 4½ pound whole chicken
  • salt & pepper to taste
  • 3 bay leaf
  • 1 tsp crushed red pepper
  • 3 carrots, chopped
  • 2 celery stacks, chopped
  • 1 medium onion, diced
  • 2 russet potatoes, chopped
  • 1 15 oz. can chopped tomatoes
  1. Place whole chicken in stock pot and cover with water.
  2. Add salt, pepper, and bay leaf to water.
  3. Bring to a boil then lower to a simmer for 1 hour.
  4. Remove the chicken from water and set aside.
  5. Once chicken is cool remove all the meat and set aside.
  6. Add the carrot, celery, onion, potato and chicken to the water.
  7. Simmer till the carrots are tenter.
  8. Add the chopped tomatoes, simmer for additional 5 minutes.
  9. Serve with crusty garlic bread.
