Mojo Criollo (pronounced mo-ho, not moe joe) is a staple marinate in Latin cuisine. It is an absolute must in marinating roast pork or Lechon Asado. It is a great dipping sauce for plantain chips or poured over boiled yuca. Spoon it over grilled, fish or chicken for a tatsy garlicky taste. make sure to watch the video 🙂
Mojo is made with lots of garlic, herbs, olive oil and citrus. The best citrus to use is Naranja Agria or Sour Orange. You can find sour oranges in any latin grocery store, they also sell bottled. If unable to find Naranja Agria you can substitute with 2-parts lemon juice to 1-part orange juice in the recipe.
- 1 cup Naranja Agria (sour orange) or 2-part lemon juice to 1-part orange juice.
- 10-12 garlic cloves
- 1 tsp salt
- 1 tsp pepper
- 1 tsp oregano
- ¼ cop olive oil
- Add the juice of the citrus and all other ingredients to blender and blend for 30 seconds.
